Chef Robert D'Orsi
Director of Product Development & Corporate Chef

Robert D’Orsi is director of product development and corporate chef of Allentown, Penn.-based Retail Brand Group, LLC, subsidiary of Sodexo, Inc., responsible for overseeing all culinary projects for the company’s signature retail concepts and food purchases in excess
of $23 million. He also represents Retail Brand Group in the Culinary Council and Category Review Council of Sodexo, Inc. Prior to joining Retail Brand Group, Mr. D’Orsi was corporate chef and product development manager for The Ground Round Grill & Bar where he was responsible for food cuttings for multiple concepts and the implementation of promotional and seasonal menu items. He has additional experience in the foodservice
industry from Red Lobster, Quattro’s Italian Bistro, Cedars Steak House and Hungry
Hunter Chop & Steak House. Mr. D’Orsi holds a Bachelor of Science degree in Culinary Arts from Johnson & Wales University in Providence, RI. He has been playing an integral role in Retail Brand Group winning several awards and accolades including Nation’s Restaurant
News Hot Concepts! Award in 2004 and 2006, Restaurants & Institutions Silver Skillet
Award in 2003, and Nations Restaurant News Menu Masters Healthy Choice
Award in 2002. Mr. D’Orsi is a member of the Research Chef Association, is Tips Certified and is Serve Safe Certified by the National Restaurant Association.

   
 


Chef Jason Casassa
Product Development & Executive Chef

Jason Casassa is executive chef and a member of the product development team of the Retail Brand Group, Sodexo, Inc’s retail restaurant development team. Chef Casassa follows culinary development and promotion projects for the restaurant group’s portfolio of nine
fast-casual concepts from ideation to implementation. He is also involved in new product research and development, recipe composition, food-cost management and collaborates with the food stylist on photography for materials distribution.
Chef Casassa has more than ten years of professional culinary and kitchen management experience and prior to joining the Retail Brand Group, he was executive chef and assistant general manager at Wholesome Living, LLC in Pittsburgh where he supervised a staff of
20 plus associates, including cooks and servers, daily operations and aided in marketing and promotional events. Also in Pittsburgh, Chef Casassa’s spent time as executive chef and kitchen manager at Atria’s Restaurant and Tavern, where he specialized in ethnic cuisine with a focus on Asian. His varied experience has allowed him to move easily from R&D to
Quick Service to Pub Style with experience in both front and back of the house operations. A graduate of the International Culinary Academy in Pittsburgh, Chef Casassa is a member of the Research Chefs Association.

   
 


Chef Liz Schall
Product Development & Executive Chef

As a graduate of the Baltimore International Culinary college with a degree in professional cooking and baking, Chef Schall has been in the food industry for 21 years. Experiencing all aspects of the restaurant industry from being a waitress, a hostess, to being a prep and short order cook at Olive Garden, Chef Schall has experienced it all. She went on as a chef at Geckos, a small fine dining establishment in Baltimore and later a prep cook at Hyatt. She later became the Sous Chef at the beautiful Glasbern Country Inn located in Fogelsville, PA.
Chef Schall went on to work for Sodexo where she was the executive chef managing more than 50 employees. She now works with Chef D'Orsi in product development for Sodexo's Retail Brand Group developing products for it's portfolio of nine fast-casual concepts.
